Southwest Chili Recipe

Ingredients:
  • 1 tablespoon canola oil
  • 1 medium yellow onion, diced
  • 1 tablespoon chopped garlic
  • 1 (28-ounce) can crushed tomatoes
  • 1/2 pound cubed leftover pot roast
  • 1 (15-ounce) can black beans, drained
  • 1 1/2 tablespoons chili powder
  • 2 cups water
  • Salt and freshly ground black pepper
  • 1/4 cup shredded Monterey jack cheese (or whatever you have on hand)

Directions:
Heat a large saucepan over medium heat and add the oil, diced onion and garlic and saute until the onions are golden, about 5 minutes. Add the tomatoes, pot roast, black beans, chili powder, and 2 cups water. Lower the heat and simmer for 30 minutes. Season with salt and pepper, to taste. Ladle the chili into serving bowls and sprinkle each bowl with 1 tablespoon of cheese. Serve hot.

Spiced Turkey Soup

Ingredients:
Leftovers from a Large Turkey, bones and all
A few Sprigs of Rosemary (or dried)
A few Sprigs of Fresh Thyme (or dried)
1 Bunch of Fresh Parsley (or dried, if at all)
2 Tbsp of Olive Oil
2 Onions, Quartered
3 Large Carrots, cut into large chunks
4 Stalks of Celery, cut into large Chunks
2 Bay Leaves
1 Tbsp of Black Pepper Corns
16 cups of Water
Salt
Bring to a boil and simmer for about hours. Use a colander and drain. If you put the stock in the refrigerator overnight, you can skim all that calorie laden fat off the top.
I usually use aromatics when I cook my turkey, such as onions,carrots,and celery, so I jut put them in the pot with the rest of the turkey. If I have leftover gravy, that goes in too. I even have added leftover dressing. It all adds flavor and is all drained off the broth. A lot of people I know are not familiar with using bay leaves.They are a great way to get a full bodied flavor. I always use them in my pot roast.

Split Pea Soup with Smoked Ham

Try this wonderful soup made with organic peas and nitrite free ham. A comfort food classic this soup is really great on a cold evening with a grilled cheese sandwich and tossed salad. This is a great way to use leftover ham and it is quick to make.
Ingredients:
1 medium carrot large diced
1 cup onion large diced
2 tbs olive oil
2 cups split peas rinsed and drained
4 cups chicken broth
2 cups ham diced
1 tsp dried oregano
3 tbs fresh thyme in a sache bag you can use cheesecloth or a tea bag used for loose tea

Directions:
1. Begin in a large pot at on that will hold at least two quarts. place the
olive oil, onions and carrot and sweat them over medium low heat until
tender; About ten minutes.
2. Add the peas at this time and allow them to be mixed thoroughly with the
vegetables and oil.
3. Now add the sache of thyme, broth, ham and oregano and cook covered over
medium low heat for thirty minutes or until the peas are soft.
4. Allow to rest for about a half an hour for the flavors to develop.

Chicken Tikka Masala

Ingredients
·         1 cup yogurt
·         1 tablespoon lemon juice
·         2 teaspoons ground cumin
·         1 teaspoon ground cinnamon
·         2 teaspoons cayenne pepper
·         2 teaspoons freshly ground black pepper
·         1 tablespoon minced fresh ginger
·         4 teaspoons salt, or to taste
·         3 boneless skinless chicken breasts, cut into bite-size pieces
·         4 long skewers
·         1 tablespoon butter
·         1 clove garlic, minced
·         1 jalapeno pepper, finely chopped
·         2 teaspoons ground cumin
·         2 teaspoons paprika
·         3 teaspoons salt, or to taste
·         1 (8 ounce) can tomato sauce
·         1 cup heavy cream
·         1/4 cup chopped fresh cilantro
Directions
  • In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.
  • Preheat a grill for high heat.
  • Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.
  • Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

Iced cucumber soup is suitable for a hot summer’s day garnished with sour cream and fresh dill. This quick and easy soup can be a refreshing lunch, light dinner.  It’s also a great way of getting the kids to eat the vegetables. Cucumbers contain a lot of vitamins and minerals including vitamin C, silica, potassium and magnesium to name just a few. So get cooking and keep cool.


Ingredients
  •          3 cucumbers
  •          1 onion
  •         2 slices of butter
  •         3 tablespoons plain flour
  •         2 ½ cups of chicken stock
  •        1 teaspoon dill
  •        2 teaspoons lemon juice
  •         ½ print cream
  •        Salt, pepper
  •       Chives or mint

Preparation
Peel cucumbers, cut in half lengthways, remove seeds, then chop finely. peel and chop onion. Sauté cucumbers and onion in butter until soft. Stir in flour, then gradually add stock. Add dill and lemon juice. Bring to boil, stirring. Remove from heat, cool. Push the soup through sieve or blend in electric blender until smooth. Stir in cream. Season with salt and pepper. Sprinkle each serving chopped chives or mint.
