Ingredients:
- 3/4 cup yellow cornmeal
- 1/2 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 1/4 cups mashed bananas (about 3 medium)
- 1 large egg
- 2 tbsp milk
- 2 tbsp canola oil
Directions:
- Preheat oven to 400 degrees F. Line a baking sheet with foil and coat with cooking spray.
- Whisk cornmeal, flour, baking powder, salt, cinnamon, and cayenne pepper in a medium bowl. Mix banana, egg, and milk in another bowl. Add the cornmeal mixture to the banana mixture and stir until just combined (will be lumpy).
- Heat 1 tbsp oil in a large nonstick pan over medium-high heat. Once the oil is hot, reduce the heat to medium. Using a 1/4 cup measuring cup, scoop batter evenly onto pan. (I could fit 5 fritters on mine). Flatten slightly with the back of a spoon. Cook the fritters until golden brown on each side, about 1-2 minutes per side. (Remember, you’re not cooking them all the way through.) Transfer to the baking sheet. Heat the remaining tbsp of oil and cook the remaining batter.
- Transfer fritters to oven and bake until puffed and firm to the touch, about 8-10 minutes.
