Fish Tacos



Ingredients
Mango salsa

·         5 tomatoes, chopped
·         2 mangoes, diced
·         1 red onion, diced
·         1 tsp chipotle powder
·         1tsp olive oil
·         1 tsp lemon juice
·         Salt and pepper

White sauce

·         ½ cup mayonnaise
·         ½ sour cream
·         ½ packet taco seasoning
·         4 tbsp chopped cilantro
·         4 tilapia filets
·         2 tsp lemon juice
·         2 tsp lime juice
·         2 tsp grape seed oil
·         4 corn tortillas
·         ½ cup chopped cabbage
·         Guacamole
·         Lime wedges

Directions
  •       Mango salsa: mix together the chopped tomatoes, mango, diced onion, chipotle powder, olive oil, lemon juice, salt and pepper. Refrigerate
  •        White sauce: mix mayonnaise, sour cream, chopped cilantro, and taco seasoning in a small bowl. Refrigerate
  •        Place the tilapia filets in a glass dish. Add lemon and lime juice, and leave to marinate for 5 minutes. In a non-stick frying pan, heat the olive oil. Add the marinated tilapia filets and cook for about 3 minutes on both sides. Once cooked, remove the fish from the pan and place on paper towels, before cutting into strips.
  •        Place all ingredients on the counter for assembly. On each tortilla, place the cooked fish, white sauce, cabbage, mango salsa and cilantro. Fold the tortillas and serve with guacamole and lime wedges.
