Ingredients
- 2 tbsp active dry yeast
- 1 tbsp honey
- 1 cup warm water
- 3 cups all-purpose flour
- 1 tbsp olive oil
- 1 tsp salt
- 1 cup Barbecue sauce, divided
- ½ small green pepper, cut into thin strips
- ½ cup sliced mushrooms
- 1 cup Mozzarella cheese, grated
- 6 ounces boneless chicken breast, cubed
- ½ small red pepper, cut into thin strips
- 1 small tomato, diced
Directions
- Make pizza dough: in a medium bowl, add warm water, honey and stir it until honey dissolves. Add dry yeast and stir until it dissolves. Keep yeast mixture for 5 minutes until the mixture will get a little foamy.
- In a large bowl, add flour and salt and stir it well. Add olive oil and yeast mixture. Stir flour into wet ingredients until all the flour is incorporated and knead until it’s smooth and elastic.
- Shape the dough into a ball and add little olive oil over it. Cover the dough with plastic wrap or moist towel and keep it in a warm place until double in bulk for about 1-1 ½ hours.
- Prepare barbecued chicken: in a frying pan, add chicken cubes, ½ cup barbecue sauce, stir it until just cook through, about 6 minutes. Remove barbecue chicken from heat and set aside.
- Make pizza crust: remove plastic wrap from the dough. Sprinkle little flour on the cutting board and place pizza dough on it. Roll out dough into a 13 inch circle. Place pizza base on a sprayed 12 inch pizza pan. Build up edges slightly. Poke pizza base several times with a folk to prevent bubbles from forming.
- Place pizza pan on the electric grill, cover and grill over the medium heat for 10-15 minutes until bottom is lightly browned. Remove pizza crust from grill.
- Make pizza: spread remaining ½ cup barbecue sauce over the surface of pizza crust, layer with the barbecued chicken cubes, green pepper, red pepper, diced tomato, sliced mushroom, sprinkle grated mozzarella cheese on the top. Place pizza pan back to grill. Cover and cook for 5-10 minutes or until crust is golden and cheese is smelted. Remove pizza from grill. Your pizza is ready to serve.
